This is another afternoon tea favourite and it remains one of the most popular sandwiches.

The story goes that an 18th century Irish immigrant who came to England called Patrick Connolly, apparently combined the remains of a pig, cured and sliced with a topping of Leicester cheese in a bread roll . This was aptly called a Connolly after the man who invented it and is still called this in some parts of the midlands in the U.K.
These days the traditional ham and cheese sandwich has evolved with the addition of other fillings like pickles, tomatoes and salad.
I personally like to add tomatoes and a hint of English mustard to my ham and cheese sandwiches. I find a hint of mustard adds a little extra bite to the sandwich. Whole grain mustard is equally nice if you prefer less heat.

What you will need
White Bread
Sliced Ham
Grated mature Cheddar Cheese
Tomatoes sliced and seeds removed
Salt
Black Pepper
Method
Butter bread
Spread a little mustard
Then add cheese, ham and tomato
Add salt & pepper
Top with another slice of bread and remove crust
Cut into finger sandwiches and serve
