The Cucumber Sandwich is considered the aristocrat of the tea table. It is described as the cool, gracious and the most impeccable sandwich to have with your afternoon tea.

Apparently cucumbers originated in India more than 3000 years ago. The cucumber plant arrived in England in the late 14th century for the first time.
But it was much later during the Victorian era they started putting cucumber in sandwiches, which were then served at afternoon tea.
Back then serving cucumber sandwiches at tea time was an indication of wealth due to the fact cucumbers were hard to come by all year around.
Cucumber Sandwiches
Ingredients:
What you will need
Cucumber
White Vinegar
Salt
White Pepper
Butter
Fresh loaf of Brown Bread
Method
Peel cucumber and slice thinly
Sprinkle cucumber with vinegar ,salt ,pepper and leave for half hour
Drain away any cucumber juice
Slice the loaf lengthwise and remove all crust then butter
Place two layers of cucumber on the buttered bread and top with a length of bread
Slice into finger sized sandwiches
Place on a pretty plate and serve
My picnic basket always contain a box of cucumber sandwiches and it’s a wonderful addition to my summer picnic
