Lemon Drizzle Cake Recipe

This cake is a wonderfully moist cake steeped in a sharp, sweet lemon syrup and is the perfect addition to your afternoon tea



I have to say that lemon drizzle cake is one of my favourite teatime treats and one that I bake often for family and friends


“When life gives you lemons, make a lemon drizzle cake”


Apparently a lady called Evelyn Rose came up with the original recipe in 1967, according to her daughter Judi Rose. It was originally called Luscious lemon cake. According to sources Evelyn’s recipe was first published in the Jewish chronicles. She is considered by many as a culinary hero


Lemon Drizzle Cake

Ingredients

  • 225g Butter

  • 225g caster sugar

  • 4 Eggs

  • 225g self raising flour

  • 1 lemon zested

For the Drizzle

  • Juice from 1 1/2 lemons

  • 85g caster sugar


Method

  1. Preheat oven to 160°c /gas 4with parchment paper

  2. Beat butter and sugar

  3. beat in eggs

  4. Add flour and lemon zest and beat together

  5. Line a loaf tin and spoon mixture in and bake for 45 mins, until a skewer inserted into the middle comes out clean

  6. While the cake cools make drizzle by mixing lemon juice with icing sugar

  7. Prick warm cake all over with skewer and pour drizzle over.

  8. Leave in the tin till completely cooled.

I just love this cake for its mouthwatering taste, texture and the delicious tang. I like to enjoy a slice with a perfect cup of Darjeeling tea. The two compliment each other perfectly.
