The Royal Connection

We really have to thank Queen Victoria for the popularity of this wonderful cake. She loved tea parties and even insisted that everyone dressed formerly for this occasion. This simple cake was her absolute favourite.


Queen Victoria adopted the new craze for tea parties. By 1855, this simple cake was one of the queen's favourites. After her husband, Prince Albert, died in 1861, Queen Victoria spent time in retreat at the Queen's residence (Osborn House) on the Isle of Wight. According to historians, it was here that the cakes were named after her.


Tara's Recipe for Victoria Sponge


Ingredients


Tara's Victoria Sponge Ingredients:

  • 6oz Butter

  • 6oz of Caster Sugar

  • 6oz Self Raising Flour

  • 3 Eggs

  • 1/2 tsp of Baking Powder

  • Vanilla Essence

  • Pink Food Colouring (Optional)

  • Fresh Strawberries


  • Butter Cream Filling

  • 4 tbsp of Strawberry Jam


  • For the Butter Cream

  • 6oz Butter

  • 3 oz Icing Sugar

Method

  1. Preheat oven to 160° / gas 4

  2. Cream butter and sugar, then add eggs and beat well

  3. Mix baking powder with flour, add to creamed mixture and beat

  4. Put into two 7 inch greased and base - lined sandwich tins

  5. Place in the middle part of a preheated oven for about 25 mins until golden brown

  6. Beat butter and icing sugar till creamy

  7. Assemble cakes together with jam and cream filling

  8. Place berries of your choice on top & dust with icing sugar

This is one of our most popular cakes and there is nothing more delectable than a slice of beautifully baked Victoria Sponge.
