Coffee & Walnut Cake Recipe

This is a lovely classic cake with a wonderful combination of coffee and walnut with a delicious cream frosting

Coffee and walnut cake has almost become a national treasure here in the U.K. I don’t think I have ever come across a tea room here in Sussex, that didn’t serve coffee and walnut cake.

I think it’s enduring popularity is due to the surprising combination of coffee and walnut


Coffee & Walnut Cake Recipe


Ingredients

What you will need:

  • 180g Butter

  • 180g Caster Sugar

  • 3 Eggs

  • 180g Self Raising Flour

  • 2 tsp of Instant Coffee powder dissolved in 1tbs of Hot Water

  • 60g Walnut Pieces

  • 2 x 7 inch Sandwich Tins

Frosting

  • 250g Mascarpone Cheese

  • 85g icing sugar

  • 1 1/2 tsp Instant Coffee powder dissolved in 1 1/2 tsp Hot Water

  • Walnut Halves to Decorate

Method

  • Walnut halves to decorate

  • Preheat oven to 160°C /gas 4

  • Cream butter & sugar

  • Beat in eggs

  • Add flour and combine everything

  • Fold in the walnuts and coffee

  • Divide mixture between tins and evenly spread out

  • Bake for 25 mins

  • Check cake is cooked by inserting a skewer and this should come out clean

Frosting

  • Mix mascarpone, icing sugar and coffee till creamy

  • Spread half the frosting evenly on one cake then place other on top and spread remaining frosting on top

  • Decorate with walnut halves to finish

I find this cake rather sophisticated and impressive. I like to serve it as a dessert at the end of a meal sometimes with freshly whipped cream containing a dash of coffee liqueur
