My recipe for Chilli Prawns with Golden Couscous is a easy, tasty meal for two. Takes minutes to make and is lovely as a lunch or a supper.

Chilli Prawns & Golden Couscous
Ingredients:
What you will need
1 red Onion
2 cloves of Garlic
1 red Chilli
Lemon Juice
Salt
1 Tbs Tomato Purée
Cooked & peeled King Prawns
Couscous
1/2 cup of dry Couscous
1/2 cup of Boiling Water
1 Leek
1 Carrot
I Clove of Garlic
1/4 tspTurmeric
Salt
Method
Chop onion, chilli and crush garlic
Sauté everything until the onions caramelise
Mix in tomato purée
Add prawns, lemon juice and salt
Mix once more
Couscous
Prepare viscous by adding hot water to couscous
Leave aside until all the water has been absorbed
Chop and sauté the leeks, carrot
Add crushed garlic along with turmeric
Add salt to taste
Serve couscous on to plate and add prawns on top
