Todays lunch is a taste of Mexico, my favourite cuisine
Chicken Quesadillas is a family favourite. A tortilla filled with chicken, peppers, cheese and seasoned with chilli and cumin. I like to serve the quesadillas with a freshly made coleslaw using just carrots and red cabbage

Mexican cooking is wickedly indulgent with just the right amount of heat from chilli and spices. The soul of Mexican food lies in its roots which can be traced back to 7000 BCE.
It is believed that authentic Mexican food might have been introduced by the Mayan Indians. They believed that the richness of food can enhance the spirit and body of a person through taste, smell and touch.
In Mexico the main meal is traditionally served at midday and is a relaxed sociable affair and today I am honouring that tradition by serving a real family favourite, chicken quesadillas. Tortilla filled with chicken, peppers, cheese and seasoned with chilli and cumin. I like serving my quesadillas with a homemade crunchy coleslaw made with red cabbage and carrots.
This simply wonderful dish, for me conjures up a picture of sun, heat and the colours of Mexico.
