The one important thing to remember when making these or any canapés- is to make sure the base of your canapé is strong enough to hold the topping and therefore easy to pick up and eat.
Coronation Chicken Poppadom Canapés
These are wonderfully tasty and rather exotic. You can buy mini poppadoms in a packet from any good supermarket. If you can, use chicken breast meat for these canapés. Cook the chicken in advance and cool or if time is short you can buy freshly cooked chicken from the deli counter at Waitrose. I do this often to save time.
Ingredients:
Cooked Chicken Breast
Mayonnaise
Curry Powder
Tomato Purée
Lemon Juice
Black Pepper
Ready bought packet of Poppadoms
To assemble
Cut cooked chicken into small pieces
Put chicken in a bowl
Then add mayonnaise, curry powder, tomato purée, lemon juice and black pepper
Mix everything together
When ready to serve
Spoon a teaspoon of the coronation chicken mixture into each poppadum
Garnish with a coriander leaf
Always serve all your Hors d’oeuvres on neutral platters if you can so they really stand out. They are rather fun to make and takes no time at all.
